PAROTTA IN KERALA
Malayalees' all-time favorite food is parotta, there will be only less occasion were done without parotta. It is one of the most favorite food of Kerala. In Kerala, some food has a different name in different places but parotta have only one name. DUM PAROTTA is the upgraded version of dum biriyani, dum biriyani is made by cook all pre-cooked ingredients inside one pot or anything used to cook in a layer by layer manner. This cooking method is also used in the case of dum parotta. In the preparation of dum parotta use pre-cooked parotta and different curry layer by layer exactly like dum biriyani. The most attractive in dum parotta is its covering, it is fully covered inside the banana leaf which will make us feel nostalgic and give us a good smell. Many hotels, restaurants, cafes, and even bakery also selling dum parotta. Dum parotta also becomes a sensational trend in social media.
HOW ITS MADE
This dish is made with different levels of parotta with different fillings. a mud pot is usually using for this by placing banana leaf at bottom and then add gravy of any curry as your wish, Then place two or one parotta as a layer on top with chicken curry or mutton any you have, on its top layer add next two parotta with chicken fry. place your final layer of parotta on top of all this with boiled eggs, fried cashew nut, raisins, almonds, fried sliced onions, and leaves with it. finally, cover the top of the mud pot with banana leaf and tie the edges then cook it for 10 minutes.
when we break the dum on top it will show the magical smell of the parotta with missed masala flavor, and the leaf gives the fresh smell. dum parotta is now available in many places, You can buy from there or make yourself.
